Draniki
Draniki (deruny in Ukraine) Original Belarus meal draniki are soft potato pancakes served hot with sour cream, melted butter or garlic sauce. There are various recipes as for how to cook draniki, yet some important points have to be taken into consideration to get real Belarus meal. Firts of all not every sort of potato can be used to prepare draniki. The best choice is yellow potatoes that have not just been collected, but have been preserved for at least 2 months or more. Never use flour in real Belarus draniki and forget about grater with big slots. Potatoes have to be grated very finely.
Ingredients:
Preparation.
Peel and grate the potato and the onion into a large mixing bowl. The grater has to look like the iron plate which had had small nails in. Meaning this has to be the finest side of grater. Otherwise potato will not soften well. The ready mass has to look like porridge. Then pour off the extra liquid otherwise draniki will become jelly and dark. Then add eggs, salt and peer and mix thoroughly. After that heat the oil in a heavy frying pan. Add a spoonful of the prepared mass and pat it down to 1cm thickness. Fry for 3-5 minutes on each. Good draniki have to be crispy and golden on the outside, but soft in the middle, and the potato should be cooked through.
A modification of draniki - shvyndriki is cooked in a similar way. Just add a slice of sausage to one side of the half fried dranik, and cover with another spoonful of potato mixture. Fry on both sides.

Kalduny.
Kalduny is a traditional Belarus meal and is in fact stuffed dumplings, fried and served hot with sour cream or sauce. Kalduny can be stuffed with meat, mushrooms, or other stuffing

Grate fresh potato and drain the extra liquid. It is important to preserve potato starch and add it back to the mixture. Chop the pork and onion, sprinkle with salt and pepper. Do not fry. Make small dumplings out of mincemeat and wrap them into potato mixture, shape round, roll in flour and fry in well heated oil or lard. Put them all into a kettle, pour with sour cream and put in the oven for 30-40 minutes. Serve hot with sour cream, fresh vegetable, meet or mushroom broth.
